I've certainly had my share of kayaks over the years. Short, long, poly, fiberglass, touring, recreational, sit-on-top, whitewater, hybrids, etc. Been in my share of bodies of water, too.
Couple of my favs were my Native Watercraft Manta Ray 14.5 and my Current Designs Solstice GTS HV. Totally different animals but they were great.
Since I pretty much live right on a creek these days, I've opted for a new crossover boat from Liquid Logic - the Remix XP. Awesome boat!

Thomas, $800 is not a bad price. The jumped from $879 list last year to $979 this year.
I would not take a SOT on Lake Superior if you planned to leave the shoreline at all, and maybe not even then. You could get dumped quickly with a SOT. Sea Kayaks are much better options for Lake Superior kayak trips.
Every boat has its purpose, and I like SOT's and am not slamming them in any way. IMO, it would be downright dangerous on Lake Superior. And I grew up on that lake, and have seen my share of danger on it.

Funny, I feel a whole lot safer in a SOT. We go to tthe ocean and paddle 5 miles out. I woudl not do that ina SI yak.

Looks like a great trip. You guys take pretty good pictures for a couple of river-pirate-looking guys. You didn't have trouble getting served at the marina, did you?

I don't understand this line of reason. A SOT is much easier to "remount" if you dump it, and much less likely to dump in the first place since it is usually wider. You'll need clothing for the water temp (IE wetsuit or drysuit) regardless of which kayak you choose. A sit-inside kayaks' only advantage is lighter weight and speed.
