I'll be glad to give you some tips when I get there. Zac is a master and should be a good resource for you too. In the meantime here's a few:
My first suggestion is to pick up parchment paper pan liners.
There are two schools of thought on coals.
One says to place a few more than your pot diameter on top and a few less under. For example for a 14" you could go with 16 on top and 12 below turning the lid 1/4 turn clockwise and the pot 1/4 turn counter clockwise every 15 minutes.
The other technique is the one I subscribe too that calls for a ring of coals on the lid and a ring under the pot. With the coals adjacent to one another and on the outside edge of the Dutch oven, no turning is necessary.
Allegedly, either way will give you about 350* in the oven. As for time, look in a cookbook or ask your wife how long it would take in your kitchen oven at that temp.
