I went bigger than the original plan - 18'! A whole 6 yards of HyperD XL.
I've slept in it for only one night so far, but it's very comfortable. It seems like it has a massive "sweet spot". I can shift around back and forth, and side to side, and it's comfortable wherever. In normal hammocks the area to the side of my head usually feels a bit restrictive to spread my arm into, but in this hammock there's oodles of space for all arms and legs to go anywhere.
There are zero issues with getting in and out of it.
My conclusion: if you have the space, and if the cost of the extra material isn't too much of an obstacle - bigger is better!

I slept in a 156"X90" tablecloth hammock for 4 years before it ripped. The extra material on the sides just folded over my feet.
No. There's huge cotton hammocks in Brazil. 16' are pretty sweet. But you have to consider that they may need to be wider than the 11', since the diagonal lay is going to be so extreme. The 16' hammocks I've layed in are so wide I can lay completely perpendicular to the hammock. So that's a good 6' +
I'd rather be hanging.
