YouTube has many videos, check a local sewing supply store, community centers...that's all I have off the top of my head.

I have also been trying to learn to sew by hand lately. I learned how to do a running stitch and sew on a button when I was a kid but that's about it. A couple of months ago I decided I had time to learn to sew better since I'm still social distancing. My idea was to make my own "samplers" like the young girls used to do 100 years ago when they would learn how to sew. (I've also been listening to books from the 1800's on Librivox and watching Little House on the Prairie.) Of course the "sampler" would not be for show, it would just be for practice. So I grabbed a scrap of cloth and researched one stitch and practiced making that one type of stitch until I could do it nicely and evenly. Then I researched and practiced another stitch, and so on.
Another thing I did was to "deconstruct" some old clothes. I used a seam ripper and took apart the clothes seam by seam. This was very interesting because I was working on the design for 2 down underquilts and wanted to make sure I didn't miss anything when calculating the materials I needed to order. (Of course I'm not planning to sew 2 underquilts by hand. I was planning to borrow my mom's sewing machine but then a friend bought a new machine and gave me her old one. )
I am by no means an expert but I hope this information will be of use to you. I am usually the one asking questions and am glad that someone finally asked a question to which I thought I might be able to contribute something.
Since you say you know nothing about what to start with, does that mean you have no needles, thread or other sewing tools?
I just last week found Wawak.com and they have all sorts of sewing stuff at great prices. If you need to buy everything to get your sewing kit started it would be a good idea to check it out. Their prices (at least for the stuff I was looking at) were lower than Michaels, JoAnn's, Walmart and Amazon.

I picked up a set of needles and some polyester thread and some nylon thread and such at Michael's the other day
Was looking to get some quality thread for the important gear repairs shorty

In the. Media section on here there are some sewing videos by ramblinrev. Called we don't see,we make gear. Those might be helpful to you.
If you are hand sewing heavy fabric, you may need to purchase a thimble to help push the needle through the fabric. A thimble will save your fingers and you will be able to hand sew faster. As with all skills, practice before doing the real thing. And be patient with yourself.
