Depends entirely on the weather and how high you want it! Play around with it. Use found sticks if you want to make it higher than possible with your trekking poles.

Also, Zpacks makes some trekking pole handle pockets that I find useful. Or you can use a clove hitch around trekking pole or stick.

Some folks pitch with trekking pole handle on the ground. I don't do this because rodents will chew the handles for the salt.

There really isn't an ideal pole length in my opinion. Depending on the weather your tarp may be pitched higher or lower. It may also depend on whether you just want more of a view or if you just want a little extra living space to work under. Most trekking poles I see people buying and using are adjustable so you can choose the height that works for any given set up.
Don't let life get in the way of living.
I pitch at the max pole length (~53"). That's my thing.

I’m in the “as long as possible” crowd. The whole point of porch mode is to get ventilation while still providing cover. If it’s blowing hard enough to drive the rain in, I’ll just pull the poles.

Same here since I want the view. If the weather changes, then I just drop the front and hunker down. If possible, I like to set up where I'll have trees to tie off to that make the porch.
I got BD poles that extend to 140 CM (55+ inches). I usually go all the way.
I got those to use with tents that use trekking poles as support, and the short poles do not work as well.
Hiking I only extend them to 117 CM.
I collect vintage camp stoves.
I roast coffee at home.
I often don’t bother to adjust and use whatever my pole is usually set to.
Before I go to bed I often lower the head end and leave the foot end up so it’s easy to climb out for an early morning pee
