I would not underestimate the temps in GA, NC, and TN in general and in the Smokys particularly in the winter. I have hiked in the Smokys in Jan and we experienced -5. Now I am sure that you can "acclimatize" to a certain extent. I have been in shelters with SOBO hikers and their bags were a lot thinner than I would have been comfortable with. However, I would still go for a 0deg set for a hammock if I was doing it that time of year.
