I just picked up a thermarest compressible pillow sizes small. I was considering a medium, but very glad I went with the small. It is plenty big. It really doesn't compress all that small though, so if you are looking to save space..... well maybe you wouldn't bring a pillow at all.
I tried the thermarest one, will use it tenting. for hammock, I use a fillo pillow. balls up into the size of my fist.
fillo pillow (larger one) I used on ground is great in the hammock with no air in it seems nice flat and insulates my head

I use a pillow dry bag from Zpacks. I try my best to avoid single-purpose items. It's a cuben fiber bag with microfleece sewn on one side of the interior.

I find the pillow stuff sacks to be horrible. Even my down jacket doesn't make a good pillow when shoved into one of those sacks (I need something firmer like my pillow at home).
The blow-up pillows have also been lacking for me. If it's filled up all the way its way too firm. If filled up so it's squishy, and you try to move your head the smallest bit, it rockets to the other side because all the air moves over there.
For hammocking I've found a smaller size synthetic pillow works best. I use the ~4 or 5 ounce small size from Arrowhead (Kick *** quilts). Fits behind your neck perfetly and the angle of the hammock supports the rest of your head.
...now if I could only find a lightweight one for tent camping I would be all set (I've gone through about 7 or 8 models now to no avail!).

I am using a down Stoic Cardigan pullover rolled up in a stuff sack. Dual purpose. I don't need the jacket once in the hammock.

For hammocks, it is nice if you can use a piece of shock cord to tether the pillow from the ridgeline, to prevent it from sliding down or falling to the ground, when you sit up or get in/out of the hammock. Most of the pillows above either have loops, or a label than can be used as a loop.
