FYI: If you want to know what type a certain bear is, sneak up behind it and kick it. Then,

There was a thread, about a year ago, that showed a technique. You fold over you netting as many times as the number of baffles you need. Pin this together well. Then cut through the whole stack with a rotary cutter.
I haven't tried this myself, but it does sound promising. I simply mark my baffle spacing on a single layer of netting and make multiple cuts along a metal straight edge with my rotary cutter.

An alternative to cutting it yourself would be to buy the baffle material pre-cut from Dutch. A little bit less DIY-ish, but if you're making your first UQ, a little "cheat" like this can be helpful.
You can buy it in 3 widths, depending on the temp rating you are going for.

Or buy them precut from Dutch.
Iz, baffles can be any heigth. 2-3" is pretty standard. 4"+ is for a winter quilt.
The quality of down will also dictate the fill weight needed and warmth provided.
Plenty of how-to's in the DIY forum. Most of them state what size baffles they used.

+1 on folding/pinning/rotary cutting
make sure and lay down a straight edge to run your rotary cutter down. Measure the halfway point at both ends and some in between and lay the straight edge along the measured points.
I agree, it was recommended to me to buy the baffling material and I was glad I did. With all the cutting and measuring that goes into an UQ, it's a great way to save a little bit of hassle.
