Good Water trail around Lake Georgetown is a favorite among some on here. I've not hiked it but have checked the trail heads for a future hike and it has a lot of promise.
Pedernales Falls State Park offers several miles of hiking trails and primative camping. There is a loop trail around Lake Georgetown that is around 20 mi but I have never been on it. There is the Barton Creek Greenbelt, which offers some very good hiking but no camping, unless you go stealth. It has around 11 mi of pretty rugged hiking. I have used it for training hikes.
