I will usually use pins when I'm joining two pieces and need to keep them aligned.

That being said, the issue is a constant one so the information is useful for people without a lot of sewing experience. I've been sewing so long that I have no problem doing a 1/8" double folded hem by hand but I still occasionally use clips to hold fabric in place -- especially something like silnylon! I like using clips over pins because I find them quicker to attach and they aren't poking holes in my fabric (which really doesn't make much of a difference except philosophically).
What kind of fabric are you hemming? Straight or curved hem?
