I find that I set my eno up with a lot of sag and lay on the diagonal. Can under quilts work with this set up? Whenever I see pics of hammocks with under quilts it looks like people are generally laying pretty straight.

Yes, UQs work fine for the diagonal sleeper; some better than others. Of my full length quilts, I find the SnugFit gives me the greatest range without adjustments. I haven't tried many of the newer quilts on the market, but the JRB and Speer SnugFit quilts all do just fine for me and I am a diagonal sleeper.
Course, the Yetis are cut to match-up with the diagonal sleeper which kind of gives them an advantage in that area. But, they aren't full length which it seems most prefer.
Trust nobody!
With some UQs you can shift the suspension to bias the UQ, and have it more on the diagonal. Simplest way is to tie a knot at the end of the shock cord... just offset the knots from the middle, one end one way, the other end the other way.

In both my winter and summer crows nest, I sleep very diagonely in both and with very little fiddling I can get it perfect to cover me with no draft.
