Anyone else do this? What works best for a tandem set up?

Yep, done the shared tree hang. Our local spot, we get 3 hammocks sharing one tree. Two hammocks in line, and one perpendicular...basically, like a T.
Your first post. Welcome to the forum. With the head end of both hammocks, each coming off opposite sides of the largest of the three trees and the foot end each going to one of the other two trees, you are close - but not too close. Tarping the setup is a little challenging though.
In order to see what few have seen, you must go where few have gone. And DO what few have done.

The Dutchware tarp is polyester based coated silicon, and is a better option (than nylon) for anti-sag when drenched.
I've read that silicon applications on fabric allow for thread slippage, and therefore MAY allow the fabric to 'slide' within the structure of the ripstop. Perhaps this is true, perhaps this is marketing.
From the article hyperbolic statement such as...
"A top of the line tent for thru-hikers would probably implode in winds that even a basic four-season tent would shrug off", perhaps the author mean to say 'tarp', because a TarpTent Li Double Rainbow (Dyneema) would be a top of the line tent for thru-hikers. Or, if you prefer the Zpacks Duplex.
Whether or not this 'slippage' degrades the tenacity of the fabric to resist tearing is probably academic, the concept is worth exposure. The following article is centric to SlingFin's return on investment, yet generalities may be made.

My preference is bulletproof performance which overrides Ultra Light considerations, bad knees...titanium rods, etc.
The Dutchware Xenon Double Wide tarp has worked well in coverage of the Amok 3.0. it is a wind-sail in porch mode with the two long spreader bars.
If inclement weather is known to be on the way, the Robens 4m x 4m is my solid preference.
Two of the Roben's 4x4 tarps can be pitched in a modified Baker configuration over a ridgeline between two trees with a bug screen insert underneath.
