Hey guys just a quick update.
We are still on target for a LARGE smoker to be at Yates Friday evening (for reference look at rent our smoker.com). The plan is to eat between 12 and 1 Saturday, we will smoke 2 butts, 20lbs. of chicken wings, and a 30lb box of back ribs. The only side dish planned is some Mac and cheese.
My friend/coworker that is bringing the smoker is the proprietor of Dinner Bell, a catering company. He doesn’t have a trail name so I will call him Godfather since he is indeed my granddaughter’s Godfather and a good one at that!
Can others come up with other sides, maybe bring your favorite sauce, rolls, etc.?
I am not looking for any donations for myself however if y’all could contribute to the Godfather’s fuel costs for the F-350 bringing the smoker out that would be awesome.
The smoker has a large capacity so if someone wants to discuss in advance I’m sure he would be willing to smoke more of other items if planned.
Also, in the sides discussion I have a fondness for good red slaw if there is someone willing to make it.

I'm planning to bring 4 fatties. Each about a foot long and 3" in diameter. I would like to place them all on an a rack I will provide - about 18" by 24". These are too tender to lift on and off the smoker by themselves. They usually cook in 2 - 3 hours at 250°. Will this be OK?

Thank You Pappy! I will see him tomorrow for details but I’m sure he can accommodate. He does very well at the events that I have been to where he catered. Also does huge fundraisers for his Scout Troop and Church.

Good morning group, to add to Taz’s comments about food, I will add a spreadsheet for everyone/anyone to fill in. This will make it easier to keep track of everything. If someone would please let me know if the attachment works or not.
