Will a superfly work for a two hammock setup?
It depends. I have a Superfly. It has great coverage for one. For two, you would need to be extremely careful when one person was entering or exiting as the spreader bar will hit the sides of the tarp.
Additionally, it would probably not be great in a windy rain storm as you could not bring the sides as low or the doors as close with two hammocks side-by-side.
In my experience, it is better to hang two hammocks at a 90* angle - if you can find the trees to do that - than to hang side-by-side with a spreader bar.
Funny story
My wife is a bit of a romantic and despite my objections she insisted that we share a tarp. I would hang the hammocks close enough that we slept comfortably and the SF covered both. We even had some mild rain and stayed dry.
Then, one night around 3 am we got some serious rain. That was end of the tarp sharing! .
So, if you expect great weather I’d say go for it, but not otherwise. To cover both you usually end up pulling the doors out and using them as a roof in order to get more coverage.
Yeah, it should. I don't think you'd be able to close the doors though. Like the others said, it would be fine for light rain but you wouldn't be able to button it down in a serious storm.
Honestly, if I was going to do side by side regularly, I'd get that Dutch two person tarp with the internal pole mod.
We always hang side by side as well.
We gave up on the idea of store bought early on and made a custom tarp to fit our needs. I would like to replace it someday, it’s getting some age on it- but the only option is the Dutch 2-person tarp- and it doesn’t have doors.

One end has doors...the other is wide open.
We also hang together when the trees are right. Mostly in a V using three trees, or two trees if one has a good diameter, or one tree and two poles (more common out here).
When the V is tight enough we just use one tarp, a Onewind 12'.
Closing the end that is the point of the V is easy . . . the other end does not close and the doors are just out as wall extensions.
The only time we had issues was the first time we had a snow night. The snow just floated in the open end and started piling up on the quilts. We spent part of that night designing an end wall that would let the suspension of both hammocks out but block the snow from coming in.
I gave up on spreader bars (for hammocks ) after the second usage.
You can definitely do it if you want to get creative. Here is a picture of one night when I closed the doors due to high wind - it was well closed on the opposite side. Took some planning to get the hammocks close enough to do this, but we slept like babies it was so comfy.
