I'm a recent Eldorado owner, and I love it. One of the reasons I bought the Eldorado vs. XLC was that I already have a Molly Mac gear hammock that I can use for a shelf when I want to, or leave it off other times. Gives me plenty of options for covers/bugnets/shelves between the Molly Mac and the WB offerings.
I hear ya'. I just move my Smilin' Mesh organizer from hammock to hammock.

The Eldorado stuff sack can also be attached to the ridgeline for storage. Not as a handy as the XLC shelf, but I don't keep that much in the hammock with me.
I hook up one end to the continuous loop on the foot end, and then the other end to either a prusik on the hammock ridgeline, or a grosgrain loop in the middle of my snugpak underquilt. I can just unzip the Eldorado bugnet on the side the gear hammock is at, and either deposit or retrieve items from the gear hammock. Not so bad.
To be completely transparent, my gear hammock is a Molly Mac clone made by our good friend Kitsapcowboy, and I'm very proud to own it.
A while back I saw a picture of a baby in the shelf.The shelf itself can certainly support a water bottle
