The water knot is best knot for this job, it’s intended for strap. It’s just an overhand knot with the end fed back through itself.

Most knots will reduce the “strength” of the material. But the material is rated at such a high level that it doesn’t come close to a normal human body. If you are concerned about your sewing machine (or skills) often outdoor stores - like REI - know local poeple they refer to for repairs and small jobs like this. Though I applaud DIY projects, there is something to be said for piece of mind when the job is done by someone who has 1) done it many times before 2) has a vested interest in knot having it fail.
In order to see what few have seen, you must go where few have gone. And DO what few have done.
For sewing webbing by hand or machine I would use upholstery thread. Gutterman's is 100 per cent polyester and hasn't let me down (yet).
