Wanting to do a solo or maybe with a friend for an over night.
Thinking about Blowing Rock / Grandfather Mountain area.
Maybe 1 mile hike to spot and 1 mile back?
What’s a good trail and area good for a hammock set up?

Wish I knew more about that area, but one option is the Profile trail at Grandfather. There is a campsite maybe a mile or two in on that trail before it gets steep that is a fairly easy hike. If you're willing to push up the last half of the trail which is half trail and half rocky scramble then you'll be rewarded with some of the best views in the state and a choice of two more campsites which are both more suitable for hammocks than the first one IMO. This is NC State Park land so there are fees for camping and only at the established campsites. No fires on top of Grandfather Mtn.
You're also fairly close to Wilson Creek in that area, so something like the Big Lost Cove Cliffs or Darkside Cliffs trails would fit your bill of being in the ~1 mi range:

Here’s some off the top of my head.
Wilson Creek area.. both popular options so don’t expect solitude
** Harper Creek Falls area
** Big Lost Cove Cliffs (dry camp so bring water)
Grandfather Mtn - requires camping permit.. Danl Boone can be done online
** Profile Trail (as mentioned
** Daniel Boone Scout trail
Linville Gorge - dry camp somewhere on the east rim
Roan Mountain - not too far away so I’ll throw it in.
** Overmountain shelter - you can park somewhat close and walk up an old road. Weekday would be better as it’s probably crowded on weekends. And trees aren’t as obvious but plenty around.
Doughton Park - requires a free permit - but an easy walk in on an old road bed.
Stone Mtn - they have backpacking sites.
Tallpaul nailed it. Go to north harper creek in the wilson creek area. Find trail 266a north harper shortcut. Its a mile down to an awesome camp area with several great sites. Easy to access and not typically too populated. Thats been my spot to take people for20 years. Happy trails!
