Just bought an Eldorado from Warbonnet and am debating which degree Wooki to get. Very seldom camp under 40 degrees, but do on occasions. Would a 40 degree be good to say 35 degrees?

I have a 40 degree Wookie and wouldn't go much below that with it. I would recommend the 20 degree if you think you'll get into 30's.
It's all a personal preference along with rather u sleep warm or cold. I've had my zero degree wookie down to 7 paired with a 20 degree topquilt and I'm confident the underquilt will perform at least down to it's zero degree rating. The hammock gear incubator also works well with the eldorado. I just prefer the simplicity of the wookie but do use both.
Get a 20º. If you sleep well you will want to go lower temps in time.
Vent it if too hot by sliding it to the side or adding a biner or bit of cord to head end to cause a gap.
