Sounds like we're pretty well covered for meats and dessert. Wondering what I could bring to pitch in? I could bring some buns, mustard, swiss cheese, and pickles to make cuban sandwiches with some of the pork? I also have a partial bag of applewood chips I was going to bring for the smoker.

Where's the "Like" button. Cubanos are the best.

Would this work? It's cast iron with enameled coating.

I don't have a plancha, but in a pinch I've used two cast iron pans with the cubano, uh, sandwiched in between. I could bring those if nobody has anything better. Now I want to go watch "Chef" again...

It would probably work but it would make a mess of the enamel - I think Traycer's idea of a couple cast iron pans would work better.
I'm going to bring a couple racks of ribs for the smoker for some finger food while we're waiting for the rest of Pigmageddon to evolve. I'm also going to make a vinegar based bbq sauce for dipping or for the sandwi.
I have Pecan wood chips I use but I'll defer to whoever's running the show.

happy to help offload - leaving right from work so wont be there till 6 ish Friday depending on traffic

Also have two CI pans I will bring for fun and sammiches.
