I have been thinking of getting by transcontinental bike trip off my bucket list next year. Does anyone know if a hammock is possible for this trip?

You gonna work some plump off that rump, Dutch? Looks like 2775 miles from New York to LA. I would think your biggest problems will be in Arizona and New Mexico, though you could easily detour to somewhere with trees.
How many miles are you thinking of doing a day?

The traditional way is 4300 from Oregon to VA. Wyoming seems to be my biggest obstacle. I will have to research to see if I can find lodging along that stretch.

just rock an amok the whole way worst case you use it as a bivy on the ground
I would ask Randonneur about it but he's somewhere in Iowa currently on his cross country bike trip. He gave us a class on this exact topic at HangCon 2018 on Saturday while you were very busy. I believe he uses a hammock for most of a trip.
Enjoy and have fun with your family, before they have fun without you
