Why would one buy a Chameleon or Blackbird hammock over a standard netless hammock by Dutch? Is it just the modularity of accesories and such?

you buy them because they have integrated nets and/or top covers. all the other stuff is bonus
if you don't care about a net, then you can definitely just get a netless from dutch, or a traveller from warbonnet

The warbonnet shelf is awesome.
Because it’s cool to get on a band wagon. Oh yea mosquitos suck. Pun intended
Prefer the netless hammock, but have the Fronkey net. I hate zippers and tie outs. YMMV
Love is blind. Marriage is an eye opener.
Because without the top over etc you don't get the full effect

Mate your spot on , I have a 50 dollar hammock that has all the same bits , winter cover etc but cost 50 bucks Aussie
But when your into it bad and it’s all your thinking about then you buy all the good stuff even if it means overpriced American made

Modularity is indeed the killer feature of the Chameleon that sets it apart from many other hammocks. It's adaptable to just about any situation, and has bugnets, top covers, shelf and attached bag accessories, and all kinds of stuff that attaches without a problem... as well as future accessories which Dutch is always developing.
The reason to go in a different direction is to save a little weight, a little money, or a different preference. I've done a lot of looking at this... you'll only save 2-4oz if you get an option with an integrated net (or netless hammock + "Fronkey" bugnet), due to saving weight on the zipper. You'll save a little more if you're OK with the "Half Wit" hammock torso-only bug protection. It's also cheaper, if those hammocks suit your needs well.
In the end, if a couple ounces and $50 doesn't make that much of a difference to you, the Chameleon is really versatile with a low "fiddle factor" and I'd just point you to that. If you're counting every ounce and you are OK with a slightly less versatile setup, pick whichever hammock suits you best.
