I’ve placed and order for a new DH Raven. I added one peak shelf, but I’m debating adding one more item and can’t decide between another peak shelf at the “foot” end or a ridgeline organizer.

If that's the choice, I think the RO is far more useful, as it is easily accessible. You can add another shelf later if you want, or, if you need that much "passive" storage, use a gear hammock or something similar, as it's really out of reach anyway.
If it is gonna be built in I would go for the shelf, there are so many items you could buy cheap and use for a RL. Org.

One shelf and a RLO is what I have, and it's worked out very well. I think a 2nd shelf would just be overkill, but on the other hand, I don't know what all you're planning to toss into it.

I love my ridgeline organizer, but would rarely use the shelves unless the ground was really wet. But the organizers can be made with a needle and thread and a piece of about any light material, so If I really didn't know I would go with two shelves, and then DIY the organizer if I missed it later.
Neither am I, so let’s just say “stuff.” I saw a post where the author was using the foot end peak shelf for clothes and/or a blanket for later in the night...not sure I’d use it that way. I like the idea of having the RLO for small items from my pockets (and a Paperwhite), and the PS for random items or large-ish soft things.

That's pretty much my usage as well. Everything that's in my pockets during the day goes in the RLO at night, and the shelf is where I toss my jacket, hat, and any other clothing that I won't be sleeping in but wish to keep nearby. For my Chameleon, I ordered a Sidecar, so I have that at additional storage now. Honestly though, I'm not even sure what all I'll toss into it. I think I just ordered it as an impulse buy. Lol

For what it’s worth, I had a peak shelf and didn’t find it very useful. Two, for me, would be excessive. And I'm a guy that likes storage options. On the other hand, a ridgeline organizer can be added at any time if it's an order-day choice between one or the other.
I imagine if I were camping in the cold more often, I might put contingency insulation in a peak shelf... but as it is, I have a RLO and the WBXLC shelf, which I find to be way more convenient than the peak shelf was.

+1 on the ridge line organizer. I have the sewn in long pockets on the head end and that has been useful as well. Another good option would be the gear sling that doubles as hammock stuff sack.
