I like your project idea! Sounds like a great adventure.
I'm in a similar situation, in that I'm getting started with putting together a traveling kit for outdoor adventuring on a quasi-medieval theme. I'm currently working on garb (hand sewing is slow!)
I'm planning to use silk for the hammock and the quilts. Silk was known through most of the medieval period, although would have been extremely expensive.
Suspension will be hemp rope, hemp webbing, and hemp or linen for lighter cordage. Both hemp and flax/linen were very common.
Tarp will be a linen with oil cloth treatment.
I'll be interested in seeing what you come up with.

Hadn't Dutch a project with a Civil War style knapsack that transformed into a hammock ?
