Couldnt I buy a UQ that can take winter temperature and be long. If its to warm is it not just possible to open up a little?

You certainly can, but it's far from ideal. Pack space is one problem I see with that, since I use a much smaller pack in warm weather. I see no need to sweat up a 0° quilt in 60° weather
I have a 20 * underquilt that feels unbearable on a muggy summer night. The 40* I added works great as a summer quilt and when stacked with my 20* allows me to sleep comfortably down to 0*F.
I had a 0* HG Incubator but, did not find it any more comfortable than the stacked combo so I sold it.
As for length; My preference if for full length quilts.
Good Luck
