I'm 6'0". I have used a 10', but I like the 11' length best. At 6'2", I strongly recommend the 11 foot length. For me, standard widths or the new wide widths work equally well. I do like the standard width for use with an underquilt. The hammock fits the quilt a little better.
I agree that an 11 foot hammock would be good for you. With regard to width I wouldn't go any less than 60-65 inches. YMMV.

Do you happen to know who makes 11 footers?
I found the Warbonnet, but the weight capacity is only 250 lbs.?
I can't find 11 footers?
Wilderness Logics makes three 11 foot models that go up to 400 pounds.

You may have to go with a double layer hammock depending on your weight

Thanks, I checked them out, $125 is a bit much for me considering I have never hung before, but I put them on my 11" list.
