One tip on the grosgrain, which I use for binding seams on the inside of backpacks, is to fold it in half and run it over the edge of your table, back and forth. This puts a fairly persistent crease in it, and I then use wonder clips to hold it in place while I sew.
But I agree that a rolled hem seem like a good solution for this application.
