I'm buying some S biners for general purpose applications like attaching something to a ridgeline or connecting shock cord to my hammock suspension. Size recommendations?

Plastic size .5 or size 1 are adequate for hanging stuff from your ridgeline. Stainless steel size 1 or size 2 for the hammock shockcord. If memory serves the size 1 can handle a 5 lb. load and size 2 can handle a 10 lb. load.
I use a size .5 to hang things on the ridge line and a .5 or 1 to hang an under cover protector. I use a size 2 for the under quilt. It's more a matter of ease. I believe the size .5 gate struggles to get around the two amsteel lines coming off the gathered end. So I put the .5 on just one of those lines. Now the you mention it, I'll check my supply for size 1's and replace those .5's on the UCP. No reason to fight these things.
I use the metal size 1's for attaching my UQ, on my bear bag toss bag, and for attaching my tarp ridgeline to trees.
