You can dyi a simple fleece sleeve/pillowcase for your inflatable pillow. This will help you avoid a plastic feel, if that's an issue, and protect your hammock from the valve stem, if that's a concern.
i make what i call 'stuffpillows' that are like stuff sacks, i fill mine with bean bag beads and my younger brother uses polyfill from an old regular pillow, with a 5'-6' piece of paracord slip-knotted into the sewn channel (holding my beads in). i usually tie a clove hitch around my SRL about 3' up the pillow line, and loop the tag end around my suspension knot/toggle. keeps my pillow off the ground, and within reach. i leave the line end 'inside' the hammock and the pillow conforms to my neck to support my melon very well. a picture in my gallery, if anyone is curious.

I haven't gotten around to making one yet, but I really like the idea show by Sam Ducharme in this video of making a stuff sack out of a microfiber towel and putting clothes in it to make a pillow.

I love big pillows when I'm on a couch or the bed. I found out the hard way that a big pillow in a hammock means a headache or a sore back for me. I bought an AHE Cub pillow and it's size is perfect, but it's a bit firmer than I'd like. This doesn't bother me too much though, because it's stuffed with Climashield and keeps the back of my neck toasty outside.

I use the S2S Aeros Regular with the plastic valves. These are soft plastic pieces that fold into the pillow internal air space. They are flat and have no way of puncturing anything. I added Zing-it to the tabs and ran that back to a Dutch Quilt Hook on the ridgeline and then created a slip knot to slide the pillow. I now let all the air out and leave the pillow in the hammock when packing it in the stuff sac. That is how sure I am that this pillow can do no damage to the hammock. I used to use the Thermarest reversible stuff sac filled with clothes (especially a down jacket); however, this "pillow" is not consistent from night to night. Especially, when battling a cold sleep. The S2S is consistent and is now integrated with my hammock set up. Weight wise the S2S is slightly more at 2.6oz with the Sac coming in at 2.3oz. I hope to do a video, the next time I get a chance to set up the hammock with the pillow inside. I may take the Thermarest Pillow Back to REI sometime because I now use a Z Pack CF Sack for all the clothing that was in the Pillow Sac plus many more items.
I never use a pillow but you could try the dutchwaregear.com argon pillow. great price too.
I use a Armadillo Travel Pillow that I ordered from Jacks R Better.
It's a stiffer pillow than those inflatable ones, but it seems more like a pillow that you would have at home.
I also like it that one side is covered in fleece.
