This is the part that intrigues me. I've only set my HH up in a backyard, but I used the included suspension. Added a biner and a pair of rings at each end. It was simple, easy to adjust, but WOW the stretch! I had the straps about 75 inches up the trees, pulled the suspension as tight as I could, and when I got in I was only a few inches off the ground.

I'm a large guy (6', 285-ish). Would a set of whoopies help the ground clearance issue?

You won't notice any stretch with polyester webbing.

The thing about WS's is that they have a pretty long lower limit on length and thus how close you can have the hang points. What's the shortest that WS's can go? Is it 5' for a 10' max length WS?

Webbing + rings allow you to hang much shorter and thus possibly much stealthier because the shorter hang means the less high up on the hang points that you have to go in order to get the same hang angle.

That's an excellent point in favor of webbing.
