Fall Creek Falls is a great park --jaw-dropping scenery, lots of big, big falls. if your trip is in October, you could have issues with reservations (not sure how the system works for their campground, but the cabins are booked months in advance for leaf season), and will definitely have lots of company.
another great state park that's relatively close to the interstate is Frozen Head (just past Crossville).
Are you relocating for work or retirement? East Tennessee is great but can get very spread out if still working. This might help some of the locals steer you in a better direction for real estate. Then you'll have plenty of time to see the sights once here.
