Just going to throw this out there...
For the potlucks, are we splitting up the days amongst the group? Such as, half the group take Friday's dinner and the other half take Saturday's dinner. Don't want the abundance of food to hinder everyone to try out everything that everyone brought. I know we kinda tap upon this a bit last year. Thoughts?

That's the plan. I put in in the OP.
Split the PL between Friday and Saturday Night
I figure we can decide who cooks which night based on what people show up with.
My plan is the average attendance last 2 years of 12 plus but provide just enough to have the plate empty both days. Most know what I provide an appetizer so this time instead all in one pot luck just split for two days.
A week prior I will get a head count. I will be providing both days.

Just go the cheap pile and pick out as much as you want to pay for.
It's hardwood too, so it burns longer.
