Bummer about the down allergy, however there are a few vendors I know of that use synthetic insulation:
Arrowhead Equipment: https://www.arrowhead-equipment.com/...Camping-Quilts
Cedar Ridge Outdoors: https://www.cedarridgegear.com/product-category/quilts/ (look for the UP synthetic options)
Loco Libre Gear: https://www.locolibregear.com/gear.h...lts/c/45865323
UGQ: https://ugqoutdoor.com/top-quilts/synergy-bandit/ (top quilts only)
Enlightened Equipment: https://enlightenedequipment.com/revolt-apex-v2-custom/ (underquilt only)
EDIT: I've never used any of these products, so be sure to do more research and ask around for opinions.

Does "Hypo allergenic" down not cure allergy issues some people may have? I've no idea, but I always figured that was the point.

That is a great question I have no idea i love my downy goodness it never dawned on me someone couldn't enjoy that shrugs we are all different I am looking at it as a new challenge

I, too, am allergic to down so I have used with synthetic Climashield. My allergies are many so I have not gambled with hypoallergenic down. I have been happy with my Arrowhead Equipment UQ. Build quality is good, reasonably priced, and quick turn around.
Climashield will not compact as well as down and it is heavier so for backpacking, it will not be ideal. The synthetic product UP is available from some of the cottage vendors, but I have no experience with that.
Hammock camping learning curve is rather long, but the effort is worth it for this 66 yo body. Read, watch videos, test at home, etc., until your MIL is comfy and deploying her set up is easy.
