If you aren't concerned with cost but are concerned with weight, I think that down is the way to go. It is more expensive than synthetic but tends to be lighter and more compact overall. In terms of which brand to get, there are some awesome vendors listed on this site. Hammock Gear and Arrowhead seem to get great reviews and there are several others to check out. The other nice thing with down is you can order with more/less down fill depending on your temperature range and how hot/cold you sleep. Many good options from some great manufacturers right here on the site!
I just purchased a nice UQ from Wilderness Logics. They have a couple different levels and prices. Really nice guys. Marty is the best.

Down underquilt all the way! My favorite is Loco Libre. George makes the best fully customizable quilts around, IMO. You can choose your length down to the inch- to really customize to your preferences. He also offers 900fp goose down as an option, to further cut down on weight.
Underground Quilts also makes fantastic quilts. They are quite customizable as well, and offer 950fp goose down option and lightweight M10 fabric.
Hammock Gear is another excellent vendor with a pretty long history- who is known for their quilts. They offer their premium line in 850fp goose down, and are great quality.
Jacks R Better is one of the pioneers when it comes to hammock quilts. They are not very customizable, but are excellent quality and ship quickly.
Wilderness Logics has also been around a while, and makes very good quilts. He offers a premium line with 900fp goose down, and decent amount of color choices. Low shipping costs and fast turnaround.
Honestly, you cannot go wrong with any of these vendors. They all have their unique attributes; so it really just comes down to personal preference and how soon you need it.
There isn't a best option. There are only very good options with slightly different specs and features that may appeal more so or less so to you.
