My son and I did a winter backpacking trip to the Mark Twain National Forest. We did the Big Piney Trail loop in the Paddy Creek Wilderness area.

Roby, MO is a good put-in spot. You can park your car at the lake and walk about a mile to the trailhead. Then you have the option of either going east or west on the loop.
I also second the recommendation to the Buffalo National River area in northwest Arkansas. Have been there many times and there is still lots to explore.
