So a 30* phoenix would be over kill for here? I'm just thinking I can vent as needed, and I'll still be covered for the colder months in Texas since our lows are rarely lower then the 20's around here. So I was figuring the 30* would cover about 95% of my camping, the other 5% would be when I travel out of state to camp.

Lots depends on how cold you sleep. I need every bit of my 20 degree quilts, even in the 40's, and they're decent quality. You very well could get by with a 30 degree quilt, but I'd stay close to home if testing limits.
Check out Hammock Gear's Econ line of quilts, they're really nice and at a good savings.
